Steam Jacketed Kettle

As its name suggests, the steam jacketed kettle uses a steam filled jacket to surround the cooking chamber, allowing cooks to simmer soup, braise meat, cook vegetables and make porridge. As the jacket surrounds most of the chamber, this cooking kettle cooks more evenly, delivering quality food in a shorter amount of time than a traditional crock pot.


The steam jacketed kettle uses pressurized hot steam as a heat sources to transfer heat through the jacket wall over a larger than average area. The kettle is highly popular in industrial cooking as it meets long-term cooking needs and is less likely to burn food.

How to use a steam jacketed kettle?
1. Make sure the gas supply line works properly, and make sure the gas used meets related requirements and standards. Inspect each pipe joint for leaks.
2. Set the jacket valve water inlet valve switch to the ON position. Shut off both valves when water comes out of the jacket water outlet.
3. Rotate the kettle water inlet valve knob to release water into the kettle. Graduation marks inside the kettle indicate minimum and maximum water levels with the letters L and H respectively.
4. Press down the rotary ignition switch knob and rotate it to the asterisk position. At this point, press the pulse-triggered igniter knob to start the fire. Note that the knob should be held down for 15 seconds. Using the fire observation hole, users can check if the fire Is on.
5. If the fire goes out as soon as you release the knob, repeat step 4.
6. Rotate the knob to adjust the fire.
7. In the event the pressure valve alarm goes off, there is most likely insufficient water inside the jacket. If this is the case, turn off the burner immediately and refill the jacket. Special care should be taken not to stand too close to the jacket outlet in case the hot steam billows out.
8. Turn off the burner once the cooking work is complete. Turn the knob clockwise to the original position and prepare the steam jacketed kettle for the next cooking cycle.
