Pullulanase
Description
Pullulanase is obtainedby deep fermentation of Bacillus Licheniformis. It iswidely used in the manufacture of beer, starch sugar, monosodiumglutamate and alcohol etc.
Working Mechanism
Pullulanase is athermally stable debranching enzyme (starch α-1,6-Glucosidase) used in low PH applications. It can hydrolyzethe α-1, 6-glucosidic linkages of the starch to produce straight chainpolysaccharides containing 1,4-α-D-glucoside bond, effectivelyact on branched chain starch and work with other enzymes (Glucoamylase, FungalAlpha-Amylase ). So, theenzyme can quicken reaction speed and improve thecontent of glucoamylase and maltose.

1. Temperature range is 40-65℃, optimumtemperature is 60℃.
2. PH: 4.0-6.5, optimum PH 4.2-4.6

2. Unit definition: The amount ofenzyme needed to liberate 1mg of reducing sugar(Calculated as glucose) frompullulan in one minute at PH4.5, 60 ℃.
Application Guide
1. In the manufacture of glucose, pullulanse and glucoamylase are used together in saccharification step. The use of pullulanse can improve theyield of glucose by reducing the content of oligosaccharides and can reduce the amount of gluoamylase used.
2. In the manufacture of maltose, pullulanase and fungal alpha-almylae are used for saccharification. The pullulanse can improve the yield ofmaltose and reduce the content of branched chain oligosaccharides. It can be used to produce maltose syrup with 70% maltose.
3. In beer industry, pullulanase can reducethe content of dextrin in the manufacture of dry beer. During saccharification, the use of pullulanasecan not only improve the effect of saccharificatinbut also shorten the saccharification time.
4. Pullulanasecan also be used to improve the content of glucose andshorten saccharification time in the manufacture ofmonosodium glutamate, alcohol, vinegar and soy sauce etc.
Package and Storage
Liquid type pullulanaseis packed in plastic drum, 25kg/drum.
Specific package requests are also accommodated.
As the pullulanase is organic biochemical substance, sunlight and hightemperature will cause inactivation of the enzyme. So, it shouldbe kept in a cool and dry place. Avoid exposure to sunlight when being transported.
