The gardenia blue pigment is a kind of naturally-occurring pigment derived from Gardenia fruit, which has been treated with food-grade enzymes. It mainly consists of the fermented goods of both crocin and crocetin.
This product is a blue powder. It is soluble in water, ethanol and propanediol, but insoluble in grease. Its remarkable features include superb thermal stability, moderate light fastness, and ultra high tinting strength.
