Cabbage red pigment is a natural edible pigment which is made from Brassica oleracea var. capitata L., also known as Red Cabbage.
Main Component and Appearance
This product is composed of numerous anthocyanins such as cyanidin glycosides. It is a deep purple powder.
Solubility and Stability
Cabbage red pigment is soluble in water, hydrous ethanol, and acetic acid. It is insoluble in grease. It gives superb resistance to both heat and light.
Other Physical Properties
In addition, this product may change color because it is easily affected by iron, tin, copper and other ions. Its tinting strength is high.
