Description
Fungal α-Amylase is made from Aspergillus oryzal var using fermentation and extraction method. As onekind of food grade α–Amylase, it is widely used in the production of high malt syrup,beer, baking, etc.
Working Mechanism
Fungal alpha amylase hydrolyzes the α-1,4-glucosidic linkages of gelatinized starch and produces a large quantity ofmaltose and a small amount of maltotriose, glucose and other oligosaccharides.

Application Guide
Fungalalpha amylase is mainly used in the production of high maltsyrup. The optimum saccharification conditions depend on PH, temperature, concentration and dosage. The recommendedmethod is as follows: PH:5.0-5.5, reaction temperature: 50-60℃, dosage:0.15-0.30kg/ton dry starch, saccharification time: 12-24 hours.
Package and Storage
Liquid type fungal alpha amylase is packed in plastic drum, 28kg/drum.
As the fungal alpha amylase is organicbiochemical substance, sunlight and high temperature will cause inactivation of the enzyme.So, it should be kept in a cool and dry place. Avoidexposure to sunlight when being transported.
