Description
Hightemperature alpha amylase is a bacterial amylasepreparation derived from Bacillus licheniformis extract. With great resistance to hightemperature, the product is widely used in the manufactureof starch sugar, alcohol, beer, as well as in the industries of textile, dye and printing,papermaking etc.

Working Mechanism
High temperature alpha amylase hydrolyzes theα-1,4-glucosidic linkages of gelatinized starch randomly to soluble dextrins,reducing the high viscosity of the starch slurry. Oligosaccharides, glucose andmaltose can also be produced.

Property
1. Optimum temperature: above 90℃, e.g.95-97℃. At 100℃, the enzyme still retains its activity.
2. PH: 5.5-8.0, optimum PH 5.8 -6.5
3. Ca2 : 50-70ppm required.

Application Guide
1. In brewing of beer, add the enzyme in one batch inthe rate of 6MU/twhen auxiliary materials and water are evenly mixed,raise the temperature to 95-97℃, and keep for 30minutes.
2. In the manufacture of alcohol, add the alphaamylase in the rate of 6MU/t at PH6.5-7.0 in the material, then stirand raise the temperature to 100± 5 ℃, and keep for 100minutes.
3. In the manufacture of starch sugar or gourmet powder,add the hightemperature alpha amylase in the rate of 12MU/t at PH6.0-6.5,raise the temperature to 100± 5 ℃, keep for 30 minutesat 95-100℃ or 60-120 minutesat 95℃ if steam (105℃) injection method is used.

Package and Storage
Solid type high temperaturealpha amylase ispacked in plastic woven bag, 20kg/bag.
Liquid type high temperature alpha amylase is packed in plastic drum, 25kg/drum.
Specific package requests are also accommodated.
The product should be kept in acool dry place. Avoid direct sunlight.
